Straight from the Italian Countryside: Sazio di Notte's Chef Bill Patterson is coming to The VUDE.
If you have ever been to Tuscany, you know there is nothing better than the elegant simplicity of homemade pasta, and the essence of nature made possible only by local ingredients. This is not Americanized Italian Food, this is authentic, fresh, amazing Italian food.

Bill Paterson's Sazio di Notte on Orcas Island has become a foodie destination, hailed by food critics and bloggers, http://www.seattleweekly.com/2011-09-28/food/chimayo-s-orcas-noodling/ as a meal worth the ferry ride. But we are saving you the ferry ride!

After speaking to Chef Patterson about his philosophy on food and the purpose behind his restaurant, it is apparent why Sazio di Notte has earned this reputation. Patterson starts by importing the highest grade flour directly from Naples, Italy. Sazio uses all locally produced food products, from produce grown in the San Juan's very own micro-climate, to the Pancetta cured by the chef, derived from pork he raises himself! Chef Bill Patterson rewards his guests with a finished product which couldn't be fresher or more authentic.

Santiago fell in love with wines and winemaking during frequent visits to Napa Valley while receiving his MBA from Stanford. Achaval-Ferrer, his winery in Mendoza, boasts four of the five highest rated wines from Argentina (two 99's and three 98's), as awarded by Wine Spectator, and the highest rated Argentine wine to date by Robert Parker's The Wine Advocate.
