Wine Wednesday: Taste of a Lifetime** The Wines of Minimus, with Chad Stock, Winemaker
This wine event is part of the Culinarium's Taste of a Lifetime Series, which features hard to find wines that are produced in very small batches or which represent the last bottles available.

"Our work is to produce something delicious, but also thought provoking."
                      -- Minimus winemaker Chad Stock

- Five incredible wines.
- Irreverence, humor, and education.
- Café Nordo's historic space in Pioneer Square.
- A casual, entertaining hosted tasting.
- Time to enjoy aroma and flavor and to ask questions of the winemaker

This is an evening for novices and wine geeks alike. We're all in this together. And the bottom line is that we should all taste more wine.

This is a unique chance to get your own taste of a secret held by sommeliers and wine buyers around the State, the wines of Minimus made by winemaker Chad Stock are aggressively sought after, and they disappear quickly. In short, it is not likely you will taste these wines again unless you find them on a restaurant's reserve wine list or in someone's personal cellar.

Along with winemaker Chad Stock, your co-host for this grand evening is Tom Hajduk, Café Nordo's Wine Curator. In Nordo style, Tom blends storytelling, science, and history as you taste these beautiful, unusual, and rare wines. This is a rare, intimate experience and tickets are extremely limited, so we encourage you to act quickly.

About the Wines of Minimus:

In this day and age where data is seemingly used to make every decision, Chad is making wines the old fashioned way: he smells and tastes the wine in the barrel, over and over, until he perceives things are ready to bottle. In this way he is following what should be the first rule of winemaking: get out of the way; let the organic process take its course. Too much control or monitoring of data produces the same kind of wines, with similar taste profiles, which today seems to represent the bulk of what is available on shelves and in restaurants. As Chad notes, "Blanket statements about wine are dangerous and they lead to dogmatic thinking . . . our work is to produce something delicious, but also thought provoking."

We will show five of Chad's Minimus wines, with an option to purchase an additional taste of one of his rarest wines at the end of the evening.

A few of the wines we will feature:

Minimus No. 20 "Disagris"
A play on the grape called Pinot Gris (pronounced "Grees"), this is a presentation of Pinot Gris (also known as Pinot Grigio) which features the wine as it could be: instead of making a typical white wine, Chad fermented the wine in contact with the skins for so long the result is nearly a full-on red wine made from what most people assume is a white grape, which Pinot Gris is not!

Minimus No. 15, "Black Locust"
Syrah fermented in Acacia-wood barrels, resulting in a wine which dazzles the senses from start to finish: the floral, Viognier-like aromas of Acacia put forth hints of flowers and white fruit, while the complex intensity of Syrah-itself moves from brooding, dark fruit to smoke and spice. A stunning wine, and extremely rare wine at this point because of its popularity.

Minimus Dictionary Label Blaufrankisch
Utilizing the most ancient style of winemaking, Chad fermented Blaufrankisch (also known as Lemberger) in Amphorae style vessels. This produced a beautiful, engaging red wine showing that sometimes the least amount of intervention in the winemaking process can create the greatest effect. Perfect for winter meals, we will have Magnums of this available too!

Please note that the ticket price covers the wine tasting only; food will be available to order from Cafe Nordo's bar menu.
