PRESERVATION WORKSHOP WITH CHEF DAN BROPHY OF OREGON CULINARY INSTITUTE
The Side Yard Farm is hosting another seed to plate cooking class with one of our favorite local chefs Dan Brophy of Oregon Culinary Institute.
CLASS DETAILS The class will begin with a farm tour and hands on harvest with Chef Stacey Givens of The Side Yard Farm. Chef Dan will be bringing in fruit from his own urban farm homestead here in Portland and some produce will be harvested fresh from the farm and used in our preparations. The focus will be on seasonal/local/backyard fruit in acts of preservation. Smoked cherry chutney, spicy rhubarb catsup, red raspberry and currant jam to be prepared. The emphasis will be on water bath canning procedure. After class we will all sit down to a meal out on the farm.
